Pour boiling water over the tomatoes, leave for a minute, rinse under cold water and remove skins.

Slice off tops, scoop out most of insides and leave upside down to drain. Fill just before serving.

For filling: mix together all the ingredients. Refrigerate until just before meal.

Fill prepared tomatoes and dust with ground pepper.

  • 250g Cream cheese
  • 15ml lemon juice
  • 2 Spring Onions
  • pinch of sugar
