Summer apple & pear salad HERO

For the dressing, whisk the ingredients in a bowl to combine, season to taste. Toss the apple and pear wedges in the lemon juice. Combine the salad ingredients in a large bowl, drizzle with the walnut and thyme dressing, toss lightly and serve immediately.

  • 200g feta cheese, crumbled
  • 2 beetroots, scrubbed, peeled and cut into matchsticks
  • ½ lemon, juice
  • Walnut and thyme dressing

  • 2tbsp white wine vinegar
  • ½tsp thyme, finely chopped
  • ½ garlic clove, crushed (optional)
