A great tasting summer bean salad packed full of fresh flavours.

  1. Place the salad bean mix into a large saucepan with 500ml water and without salt, as this toughens the outer skin of the beans. Bring to the boil and boil for 10 minutes, then reduce the heat to low and simmer for 30 minutes. Drain, rinse thoroughly and allow the beans to cool.
  2. Meanwhile, whisk the white wine vinegar, lime juice, olive oil, caster sugar, Dijon mustard and chopped mint together in a large bowl until evenly combined.
  3. Add the cooled bean mix, along with the red pepper, yellow pepper, salad onions and tomatoes. Stir gently until the beans and vegetables are coated in the dressing.
  4. Season to taste, then cover and refrigerate until required.
