These are fantastic to make with children, and perfect to get them to eat fruit that they maybe woudn't eat normally.
Preheat oven to 190-200c
Put 12 muffin cases into muffing tins
Sift all the dry ingrediants into a large bowl
Beat the egg and add the oil and milk
Add the egg mix and the frozen fruit into the dry ingrediants and mix together, mixing as little as possible. No flour should be visable an the mixture will still be lumpy.
Spoon the mixture into the muffin cases and pop into the oven.
Bake for 20-25mins till browned and the tops spring back when pressed.
These are best eaten on the day they are made, but can be frozen individually and are perfect to pop into packed lunch boxes, they will defrost by lunchtime.
If making these for someone who is milk or egg intolerant or if you have run out then substitute it with the same amount of water (55ml for an egg)
