Summer wine and berry jellies recipe

Put the gelatine leaves in a shallow dish and cover with cold water – leave for 5 minutes to soften. When the gelatine is nearly ready, heat half the wine with the granulated sweetener in a small pan to just below simmering point then remove from the heat. Drain the water from the gelatine and stir it into the heated wine until dissolved. Stir in the rest of the wine and the cordial and set aside to cool a little more. Chop the strawberries and mix all the fruit together. Spoon the fruit into the base of four serving glasses then pour the wine over. Chill until set – about two hours.
