I had a lot of people coming round for dinner at very short notice, and as the weather was nice, I threw together this quick option ~ and everyone commented how tasty and wonderful they were. Now a regular on a sunny day, with a glass of prosecco!

Boil the corn on the cob for 15 minutes, then wrap in tin foil with a nob of butter and some chilli flakes and put on a Barbecue for a further 10 minutes.

Cook the ciabatta rolls according to the instruction on the packet.

Once cooked, vut the ciabatta rolls in half. Spread a tablespoon of spicy woodsmoke sauce on each, then layer a slice of prosciutto over that/ Slice the cherry tomatoes on half and lay on top of the prosciutto. Top with the mozzarella and then place under a grill for 3-5 minutes until the cheese has melted and is bubbling, being careful not to burn the cheese,

Remove from the grill and top with a handful of rocket. Serve on a large platter with the warmed sweetcorn. Simple, colourful and extremely tasty street party food!!!
