In hot weather this is perfect treat to serve unexpected guests or at a barbecue I have discovered and got me rave reviews with little effort.
In a jug mix the Mango juice and Coconut cream
Squeeze the juice of one lime after grating some of the peel for decoration
Pour onto crushed ice in tall glasses
Add a teaspoon of grenadine syrup on top ,without stirring.
Decorate with grated rind and mint leaves. Serve with a straw.
Use mixed fruit salad at bottom instead of ice for a great variation.
