Put your egg on to boil and set a timer for exactly 3 minutes, keep it on a medium heat to get a nice soft boiled egg.
Break of 2 lettuce leaves (about 30g) rinse under cold water and pat with kitchen roll to dry. Place the leaves on the serving dish of your choosing.
Crush 25g of almonds and place into a salad or mixing bowl.
Dice half an avocado and place into the bowl with the almonds.
Whisk together the wasabi paste, olive oil, soy sauce and black pepper then add to avocado and almonds.
Toss gently. Don‘t mix or stir.
Place the avocado and nuts onto the lettuce leaves.
Shell your boiled egg and cut into four or six pieces to top the avocado and nuts.
This is quick and easy and makes a great breakfast despite being a salad. For some added substance or flavour, add a chopped beetroot (only 23 calories) or some cherry tomatoes.
