I wanted a way to use avocado in a main meal rather than as a side salad or guacamole, so I tried to add as many superfoods together into a dish as possible, and came up with this salmon, avocado and quinoa recipe full of nutrients, flavours and so quick to make!
Boil the kettle, add quinoa to hob with the veg stick cube and cook as per pack instructions
Sprinkle the paprika onto the salmon, along with lemon or lime juice.
Heat the oil (I used coriander) and extra lemon/lime juice in the pan and gently cook the salmon on low heat, skin side down to start
Whilst the salmon and quinoa is cooking, chop the peppers finely for the salsa, and slice the red onion (as fine as you wish)
Slice the avocado and mint leaves and gently add to the salsa, along with a few squeezes of fresh lime juice (as you like it). Be careful to to squash the avocado!
When the salsa is prepped and the quinoa cooked, all you have to do is finish the salmon!
Present the quinoa nicely by pushing into ramekin or small bowl and turning out, and arrange the rest around the side.
Add the lemon wedges to serve!
quinoa needs a lot of water to cook - check it doesn‘t stick to the bottom! If you are worried about cooking the salmon too quickly then chop the veggies first. You could even add some baby spinach into the salsa for extra super food hit!!
