Cut the pork loin into thin strips and rub in the spices. Add a splash of soy sauce and leave to marinate for 1 hour in the fridge.
Put a large pan of water on to boil (for the noodles).
Bring a frying pan to a high heat with the oil. Add the pork and flash fry. Add the tomatoes to the pork.
Put the noodles into the boiling water and cook according to packet instructions. Add the sherry vinegar and tomato puree to the pork, keeping the heat high. If the sauce is too sour for your taste, add honey until it tastes right. Add the vegetables and pineapple chunks and coat in the sauce.
Drain the noodles and season with soy sauce. Add the noodles to the sauce and stir in until coated. Serve.
Tips: Add in any other vegetables you might like, such as pak choi. I like to use a selection of peppers, a bit of green and a bit of yellow, but the recipe is very versatile.
