Sweet and Spicy Shakin-Cous-cous

This recipe was created using ingredients from Tesco‘s range and its creator is part of Tesco‘s Orchard programme. Other supermarket products may not deliver the same flavour profile.

Most easily made in a plastic container that can be microwaved. No need for pans or lots of cleaning.

Prepare couscous mix - Combine dry couscous with turmeric, chilli, garlic and paprika. Pour over just enough boiling water to cook and cover (as per instructions).

Prepare the rainbow - Cube vegetables and fruit (about 1-2 cm each). Radishes work best when sliced thinly instead. Mix together in microwavable tub and microwave for 1 min (full power)..

Prepare for the shake! - Fluff couscous with a fork. Add the couscous to the microwaved tub. Add the cooked chicken slices.

Shake!!! - Replace the lid and give the tub a good shake until well mixed.

Finish up - Microwave finish cooking and for the flavours to mingle (about 2 mins depending on preference).

Enjoy Clean-up time... About 1-2 mins.

Its ‘shakin‘ for a reason - It‘s how you mix it. Very simple, very quick and very healthy. Low in salt, low in fat, full of nutrients and high quality protein. The underlying spices give the dish a very similar taste to paella, without the excessive salt and its quantities can easily be doubled up to feed more. Couscous is a great base for anything as it starts bland, but its your canvass. This recipe is very flexible. The ingredients used and give a good balance between sweet, sour and spicy, whilst still being bold enough to make a full meal. They can be swapped for literally whatever is in the house (in fact this was born out of trying to use up some leftovers, therefore following completely isn‘t necessary). Knock out the chicken and throw in Quorn, add some cashews, swap in prawns for chicken.
