Preheat the oven to Gas 5/190°C/Fan 170°C.
Cut four dinner-plate sized circles from non-stick baking paper, and four bigger circles of foil. Lay one paper circle on top of each foil circle. Place one fish fillet in the centre of each paper circle. Divide the vegetables into four and scatter them over the fillets. Add 2tbsp of chilli sauce to each fillet.
Close the packets by folding the edges as for a Cornish pasty. Place the pakets onto a baking tray and bake for 12 minutes. Open one to see if the fish is cooked and bake for a further 2 or 3 minutes if necessary.
Place each parcel into a shallow bowl and serve, with noodles if preferred.
Other vegetables can be added to the fillets, such as bamboo shoots or beansprouts, before cooking.
