Heat large saucepan and add a small amount of olive oil
chop onion and sweet potatoes and grate ginger.
cook in the oil for about 7-8 mins
add chicken or vegetable stock until vegetables are covered
simmer for 20 minutes. Season with ground black pepper, garlic salt and mixed herbs.
very simple, quick to make and very tasty. Keeps in fridge for a 2-3 days for lunches, etc
