Preheat oven to Gas 5, 190c, fan 170c.
Wrap each of the sweet potatoes individually in tin foil. Put the potatoes on the top shelf of the oven and cook for 45-60 mins or until soft. Leave the sweet potatoes to cool, then peel off the skin and discard.
Add the sweet potatoes, tahini, and harrissa to a bowl. Use an electric blender to mix all ingredients to a smooth consistency.
Sprinkle over coriander and pomegranate seeds before serving. Great with pitta bread.
