My daughter is vegetarian and on a very recent visit home, called in at our local Tesco, bought all the ingredients and made it in about 40 mins
Heat the oven to 200 fan. Add the halved and seeded red pepper and cook until slightly charred - about 20 mins
Peel and chop the onion and garlic and fry in the oil for about 5 mins until soft but not brown
Peel and chop the sweet potato into dice and add to the onion and fry until soft - about 5-8 mins
Add chopped charred pepper to the mix and season with salt and pepper
Arrange the whole mixture so that it covers the base of a large frying pan. Keep the heat on low
Beat 6 eggs and 3/4 of the grated cheese together and pour over the mixture in the pan.
Cook on a medium heat until the bottom looks stable
Sprinkle the remainder of the cheese on top of the frittata then place the pan under a pre heated grill for about 3 mins until almost set
When cooked serve in generous slices with a dressed green salad
You can add other ingredients such as mushrooms or broccoli florets. It‘s healthy and delicious
