Thickly butter the brioche or bread on one side then press the almonds into the butter. Sprinkle with the sugar. Lay almond-side down and spread with the cheese.
Halve the strawberries and arrange on the cream cheese, then top with the other slice of bread, almond-side up.
Heat the oil in a pan and fry the sandwiches very gently until the almonds and bread are golden and caramelised – 3-5 minutes. Try not to move it around too much or the almonds will fall off. Turn over using a spatula and repeat with the other side.
Drain briefly on kitchen paper and eat while warm.
