Sweet summer fruit sponge recipe

Preheat oven to 180 degrees, Wash and prepare fruit (can be mix of raspberries, blackberries or redcurrants).

Place fruit in large ovenproof glass bowl and sprinkle over 20g caster sugar.

Mix together butter, sugar, flour and eggs until well combined to make sponge mixture.

Spoon sponge mixture over fruit.

Put into warm oven for approximately 35-45 minutes until sponge is golden brown.

Test sponge is cooked and then take out of oven and allow to cool.

Tip out delicious berry sponge onto a large plate and enjoy. Serve as is, or with cream, custard, ice cream!
