Tamarind prawns with watermelon and feta salad recipe

Combine the salad ingredients in a bowl. Set aside.

In a large bowl, combine the tamarind paste, sugar and oil with a little seasoning. Add the prawns, mixing until evenly coated.

Thread the prawns onto a skewer and cook in a hot griddle pan or on the barbecue for 1–2 minutes each side until just pink and cooked through.

Serve the prawns with the watermelon salad.

  • handful fresh mint, leaves shredded

  • 15ml (1tbsp) groundnut oil
  • 250g (8oz) raw king prawns or defrosted if frozen
