Turkey with sausage meat stuffing and leek, rosemary and apricot stuffing HERO

Heat the oven to Gas 5, 190°C, 375°F. Stuff the sausage meat into the neck end of the turkey, fold over the skin and secure with a skewer.

For the apricot stuffing, mix together the onion, chopped sprigs of rosemary, the garlic, breadcrumbs, leeks and apricots. When evenly blended add the beaten egg and mix in. Stuff the mixture into the cavity at the leg end of the turkey, fold over the skin and tie the legs together. Weigh for cooking time.

Rub the roasting pan with half the butter, put in the turkey and loosely cover with tin foil. Place the turkey in the oven and cook according to cooking time given on packaging allowing for the extra weight of the stuffing. Check from time to time and rotate the roasting tray in the oven to ensure that the turkey cooks evenly all over.

One hour before the turkey is cooked, cut the bulbs of garlic in half and add to the roasting pan.

Half an hour before your turkey is cooked, remove the foil and rub the turkey skin all over with the remaining butter. Cut the tangerines in half and add to the roasting pan with the remaining rosemary sprigs and the bay leaves. Return to the oven and cook for the final half hour until the turkey skin is golden. To check that the turkey is thoroughly cooked, gently insert a skewer into the thickest part of the thigh; if the juices run clear it’s ready.

When cooked, remove the bay leaves and transfer the turkey to a warm serving plate with the roasted garlic, tangerines and rosemary. Cover with foil and keep warm.
