I‘ve always dislike boiled sprouts as they are too bitter for my palette. This method seems to make them more sweet and rather more tasty.

Peel outer layer off Brussels and halve

Halve the leek lengthwise and then cut into 1/2cm width chunks so you end up with lots of semi-circle slices.

Par-boil the sprouts and leek for about 10 mins (so that they are still Al Dente) with a generous sprinkle of Maldon Sea Salt

Take off heat and leave to drain for a few minutes

Add a tablespoon of olive oil and a knob of butter to a large frying pan along with black pepper and (optionally) a couple of tablespoons of light Soy sauce

Chop the 3 rashers of bacon into 1-2cm square chunks and place in pan along with the sprout/leek mix - saute for around 5-10 mins (depending on how firm you like your veg)

Cut across the remnant of the stalk of each sprout at the bottom, and the outer couple of ‘leaves‘ will fall off easily.
