Dice the onion and potato and lightly fry both with the garlic and Thai sauce in butter and olive oil.
Drain and blend sweetcorn with coconut milk. Add all ingredients to a casserole dish and bake in the Oven on 150°C for 2-3 hours.
Tips: Try adding Cream or Nutmeg for extra warmth and richness on chilly winter evenings.
Garnish with Parsley, Chilli seeds and Coriander Leaves. Replace Lemon with Lemon-grass for a more authentic Thai flavour.
