The second date I went on with my now husband was to a Thai restaurant, we ate this salad for a starter & loved how spicy & sharp it was. Delicious & so easy!!!
In a pestle & mortar pound together the garlic, ginger, sugar, soy, fish sauce, lime juice & half the chilli (deseeded) until sugar has dissolved.
Trim the green beans and slice in half. Slice cherry tomatoes in half.
Put the sauce, beans and tomatoes in a large bowl.
Cut the papaya in half, remove seeds & cut into fine strips. Add these to the bowl.
Add the shrimps to the bowl and mix everything well.
Divide salad between plates, top with mint & basil leaves followed by toasted peanuts.
