Peel and dice the potatoes and prepare the green veg.
Place a large saucepan on a medium heat and use a tiny bit of coconut milk to fry off all the powdered spices.
Add the rest of the coconut milk, bring to a gentle boil.
Add the potatoes and cook for 10 minutes.
Add the greens and cook for a further 5 minutes.
Add the prawns and leave them just long enough to heat through.
Serve into bowls with a squeeze of lime juice.
