Just make it when friends come for lunch, perfect as has not taken much time, but tastes special.
Peel and dice squash.
Saute pumpkin and red curry paste until it starts to cacth in saucepan.
add coconut cream to deglaze the pan, top with enough water to level with the pumkin and bring to boil. Reduce heat simmer till pumpkkin is soft and mushy.
Puree or leave chunky, add salt and pepper.
