Grill the turkey slices until cooked through, turning once. Cook the noodles according to packet instructions.
Meanwhile, heat the oil in a wok. Add the onions, carrots, ginger, chilli and sauces, stirring until the carrots and onions are beginning to soften, 4-5 minutes. Add a little water if the mix becomes too dry.
Cut the turkey into bite-size pieces and add them to the vegetables. Stir fry for 1-2 minutes to coat with the sauce. Serve with the noodles.
