Place all the vegetables in a large pan, just cover with water and bring to the boil.Simmer for 18-20 minutes, until tender.
Drain the vegetables, return to the pan then mash slightly, adding half the cheese before mashing a little more, leaving the vegetables slightly chunky.
Spoon into an ovenproof dish then top with the remaining grated cheese. Cook under a high grill until bubbling and golden.
