This recipe was devised after a big night out, all the right ingredients – and minimal washing up to get you going.
pre-heat oven griller
Bring a medium pot of water to the boil and a little salt.
Chop the potatoes into smallish, bite size chunks and add to the boiling water. Cook the potato until soft.
Whilst the potatoes are boiling, chop the bacon into strips, the cherry tomatoes and mushrooms into half. The shallots should be quartered depending on size. The chorizo into small chunks. The red papers should be sliced into thin strips – flame roasting peppers makes them much sweeter!
Heat a large frying pan, with some olive oil
Add the bacon and chorizo to the pan, followed by the shallots
Drain the potatoes and add to the frying pan
Add the tomatoes, mushrooms, red and yellow peppers and cook through all the ingredients for 5mins
Spread the cooked ingredients evenly around the frying pan and add the baby spinach on top. Crack the four eggs in each corner, grated some cheese over the top and then put under the grill until the eggs are cooked to desired consistancy.
Remove from the grill and enjoy straight from the pan!
