Preheat oven to 180°C.
In a bowl beat the eggs, add milk and seasoning and set aside.
Place the potatoes in boiling water and parboil for up to 5 minutes. Drain and allow to cool before slicing thinly. Grease a pyrex dish with a thin layer of butter and layer some of the potato slices at the bottom of the dish and sprinkle over somoe cheese. Over the cheese add some thinly sliced tomato and top with 3tbsp of the egg mixture.
Repeat each layer, until you have run our of potato slices. Pop in the oven and bake for 40 minutes. The cheese should be a nice golden brown.
