Blend together the coriander, chillies, turmeric, cumin seeds, garlic and gram flour into a fine paste.
Take a heavy based saucepan, add the oil and gently fry the paste for 1-2 minutes, taking care not to burn it, add the prawns and 2tbsp of cold water and coat them well in the mixture.
Stir fry on a high heat for 3 minutes, then reduce to a simmer and cook for a further 3–4 minutes or until the prawns are cooked.
Add the lime juice and serve with steamed rice.
