Tikka potato skewers recipe

Preheat oven to gas 6, 200ºC, 400ºF. Place the potatoes, curry paste and oil onto a large baking tray. Toss together to coat all the ingredients. Spread out into one single layer on the tray. Place in oven and cook for 25-30 minutes until browned and tender – stir and turnover halfway through cooking.

Place together in a small bowl the yogurt and mint jelly, mix together until combined well. Add the cucumber and chill until ready to use. Thread about 4 potato cubes onto the ends of long bamboo skewers, serve on a large plate with mint raita in a small dipping bowl.
