Ingredients

  • 1 pear
  • 1 knob of unsalted butter
  • ½ teaspoon ground allspice
  • 1 whole nutmeg, for grating
  • 1 clementine
  • 1 x 250g jar of quality cranberry sauce

Method

  1. Chop the pear into 1cm pieces, discarding the stalk and core.
  2. Place a large non-stick frying pan on a medium heat with the butter, allspice and a good grating of nutmeg and cook for 1 minute, stirring regularly.
  3. Stir in the pear, strip in the clementine zest and squeeze over the juice, then shake well to coat. Cook for a further 2 minutes, or until softened.
  4. Tip in the cranberry sauce and warm through, then pour into a serving bowl.

Tip: Swap the pear for apple, switch the spices for your favourites, or throw in a handful of fragrant herb leaves – the sky’s the limit!
