Mix the espresso, water and alcohol in a dish and set aside.
Separate the eggs and leave the whites to one side. Beat together the egg yolks and sugar in a large mixing bowl until a pale and creamy consistency has been achieved. This is easiest with an electric mixer.
Add the mascarpone to the bowl and fold in gently before using the electric mixer to get a smooth cream.
In a separate bowl, whisk the egg whites to stiff peaks. Using a metal spoon, fold the mascarpone mixture into the egg whites until it is all combined and smooth.
Now start to construct the dish. Take your serving dish and make a layer of lady fingers in the bottom, dipping them into the coffee mixture before placing them into the dish. Next, cover the lady fingers with a layer of the cream. Repeat these steps until you have used all the ingredients, finishing with a cream layer on the top. Dust with cocoa and enjoy.
If not serving immediately, leave off the cocoa until you are about to serve.
