I enjoy making this as a gift for friends.
Heat the water with the sugar and the lemon peel until a light syrup is obtained.
Place this syrup in a mold and leave it to cool.
Pour the egg yolks in a bowl and beat them gently.
Add the left over syrup from covering the walls of the mold and mix well with a spatula.
Pass the mixture through a sieve and into the mold with the syrup.
Place the mold in a steamer and steam until it sets.
This will take about 20 minutes.
Leave to cool down, remove from mold and serve.
Keep the egg whites to make egg white omelettes or meringue for example.
