Cut the tofu into 32 cubes. Toss together with the baby leaves, celery and red onion and divide between 4 plates.

Mix the dressing ingredients, season to taste if you like and drizzle over the salad.

  • 1 small red chilli, deseeded and finely chopped
  • 2tsp finely grated fresh ginger
  • 2tbsp rice vinegar
  • 2tsp grapeseed oil
