Mix the chilli, rice vinegar and honey together and set aside.
Cut the leek into 4 cm (1½ in) strips. Place the leek and red pepper pieces in the steamer, the place the tofu cubes on top. Steam for 8 minutes.
Add then mushrooms and noodles to the steamer tier above the tofu, and steam for a further 5 minutes.
Put everything together in a bowl, toss in the chilli mixture and serve with soy sauce.
