Tomarto and red pepper cod recipe

I was bored one day and wanted the fish but wanted something different found the above ingredients and started to work with it and over few months I refined the recipe, it is good with chicken too replace veg oxo with chicken cube

peel 4 clove of garlic and chop in to small pieces. peel a large onion and chop in small pieces. One large red pepper cubed in half a cm pieces. can of tomato you will need salt black peeper and olive oil. Bit of parsley

heat up oil and fry red pepper till they are soft add onion half way through, onion must be not burned at the end add garlic. as garlic is about to change colour add tomato's in it and cover leave it to simmer for 5-10 minutes , add half a glass of water . as when all the ingredients are almost dissolved add the fish pieces. Dissolve a vegetable oxo cube with with half aglass of water and and pour it in . Cover and leave it to simmer further 10minutes. Couple of minutes before taking it off heat add parsley and black pepper. Ensure liquid is reduce to half and serve it with Ciabbatta bread
