Tomato and basil sauce with mozzarella and crispy ham recipe

This Italian-inspired dish makes a great dinner party starter.

Preheat the oven to gas 6, 180°C, fan 160°C. To make the sauce, put the tomatoes, onions and garlic in a large pan. Add 100ml (3½oz) water and the olive oil. Season well. Cook over a gentle heat for about 20 minutes, until the tomatoes have softened and the liquid has reduced.

Meanwhile, cut each mozzarella ball into six slices and divide between four serving plates. Arrange the ham on a baking tray and cook in the oven for 6-8 minutes, until crispy.

Stir the basil through the sauce and then remove from the heat. Top each plate of mozzarella with a spoonful of the tomato sauce. Garnish with a piece of crispy ham.
