Tomato, pickled red onion and caper salad recipe

Juicy vine tomatoes and red onions give a delicious brightness to your plate. This is a great side dish for picnics and barbecues, and can even double-up as a burger topping.

  1. Mix the onion, vinegar, sugar and a pinch of salt in a bowl. Set aside for 10 minutes.
  2. Arrange the tomatoes on a platter. Add the oil and capers to the onions; stir to mix well. Pour the mixture over the tomatoes to serve.
