thinly slice the tomatoes and red onion,arrange on a plate and scatter the olives over
put the olive oil in a pan, crush the garlic into it and warm through gently until the oil takes on the flavour of the garlic
tear up the bread into chunks and toast lightly under the grill
scatter the bread over the tomatoes etc. and drizzle over the oil, sprinkle with sea salt
stale bread works great for this, also the recipe can be fine tuned to your taste by adding finely chopped chilli to the oil , or sprinkling a few herbs over
