I was asked, by a well known soup manufacturer, to create a recipe using condensed tomato soup for my blog and this is what I came up with, it is really delicious and you wouldn‘t be able to guess what the main ingredient was if you didn‘t know!

Pre-heat oven to 150 degrees celsius

Cream Butter and Sugar until fluffy

Combine soup and water and add into creamed butter and sugar

Fold in the dry ingredients then add raisins and walnuts.

Transfer to an 8 inch round tin for 1.5 hours. Skewer should come out clean

Cool in tin and then transfer to wire rack to cool completely.

Roll the raisins and walnuts in a little bit of flour before adding them to ensure they don't sink straight to the bottom of the mixture. Serve plain or with a simple cream cheese frosting. This is a heavy, dense cake that is perfect with afternoon tea. The taste is similar to a spiced fruit cake, although the tomato soup adds an extra dimension.

  • 175g Dark brown soft sugar
  • 295g Condensed Tomato Soup
  • 200ml Cold Water
  • 1tsp ground nutmeg
  • 1tsp bicarb of soda
  • 200g Raisins
  • 100g Chopped Walnuts
