Slice the tomatoes thickly and lay on a serving platter.

Pour over the oil. Tear up the basil and scatter over then season generously and leave for 15 minutes or so for the tomato juices to release and create a dressing.

Tear or slice the mozzarella and scatter over the tomatoes before serving.
