Preheat the oven to 190°C.
Place the trout in a roasting tray. Rub all over with the olive oil and season. Arrange the pancetta cubes on top and roast the fish for 35-40 minutes until the flesh is cooked and the skin is crisp.
Remove from the oven and sprinkle with the chopped parsley. Transfer to a serving dish and garnish with a sprig of parsley leaves before serving.
