i came across this recipe when my daughter Loves frozen fish cakes out of the shops, so i thought i would try my hand and adding a bit of diffrence to the dish and added the tuna instead of the haddock or pollock or whatever eles is in orignal fishcakes.
peel and boil 100g of Potato. Once Boiled, mash till sturdy ( not to mashy )
prepare your 100g of tuna, flake the tuna in to a bowl, add the Spring Onions, Salt and pepper and the lemon Juice. taste and adjust to your suitability.
Once your Potato‘s are boiled and mashed. add to the bowl of tuna and mix. Form medium sized balls and then flatten (not to flat)
whisk your eggs and add to a bowl, put your bread crumbs on to a seprate bowl. Add your Tuna cakes to the egg then on to the bread crumbs, continue untill you have no tuna mixture left.
add oil to your frying pan, and shallow fry untill golden and crispy. for aprox 10 mins. Enjoy
cut potato in to smaller peices (speeds up the cooking process)
