Cook the rice noodles according to the manufacturer‘s instructions and leave to cool. You can run cold water through them to cool them down if you are short on time - but make sure you drain them thoroughly
Put the soy sauce, sake, rice wine and sugar in a pan with the ginger and chillis. Bring to the boil, add the lime juice & zest. Set aside to cool
If your noodles have stuck together while cooking, run some cold water through them and use your fingers to separate them. Drain thoroughly and put into a mixing bowl.
Mix the carrots, cucumber, mangetout, radishes, spring onions, prawns and coriander leaves into the noodles and pour over the salad dressing. It‘s easiest to mix everything properly if you use your hands
Heat up a griddle pan or a frying pan and oil it well. Cook your tuna steaks to your liking and serve with the noodle salad
