With Christmas just around the corner here is a nice little recipe for using the left over turkey so first take the left over turkey and strip it down to get 2 cups of turkey and chop then pop it into a mixing bowl
Take 3 average size peppers red green and yellow and chop the head off to keep as a lid then scoop out the insides
pop the rice and frozen peas in a pan and boil for around 15-20 mins once boiled let them cool and pop into the mixing bowl with the turkey
chop the tomatoes and mushrooms and pop in a frying pan for a about 10 mins this can be done at the same time as the rice and peas. Once cooked cool and pop into the mixing bowl
Add 1 cup of rasins 3 tbl spoons of tesco finest greek yogurt and 2 tls spoons of lemon juice. Mix all ingrediants together and then start to fill the peppers with the mix
pop the stuffed peppers in the oven for around 10 mins until the ingrediants fuse together take out and pop on a plate.
finally pop a slice of mozzarella ontop of each and place in the oven for a few mins until golden brown
just chop the turkey any way does not have to be perfect and really stuff the peppers so they are bursting with flavour
