Cook the spaghetti in boiling salted water, until just tender. Drain and put into a buttered casserole dish.
Melt 25g of butter in a pan, add flour and cook for 1 minute. Add stock, cream, wine and mustard powder and heat until thickened. Season to taste
Add 75g of grated Parmesan to the sauce and stir well
Chop turkey steaks into 2cm cubes
Melt remaining butter and fry turkey and sliced mushrooms until cooked.
Add turkey and mushrooms to spaghetti. Pour over cheese sauce and top with remaining grated cheese. Sprinkle with a little cayenne pepper.
Cook at gas mark %
5, 190C for about 25 minutes, until brown on top.
nb. Cooked leftover turkey works well in this dish
