Preheat oven to Gas 6, 200°C, fan 180°C. Wrap potatoes in foil and bake for 1 hour.
Put the bacon, mushrooms, onion and mustard into a pan and fry until the bacon is crispy and onions tender.
Halve the potatoes, scoop out the flesh from the potato, keeping the skins, mix in some grated cheese and natural yogurt and mash. Add the bacon mixture to the potato and mix well.
Fill the potato skins with the mixture and top with the rest of the grated cheese.
Bake for about 20 minutes or until the cheese has melted and the mixture has warmed through.
