I fell in love with Tzatziki when in Kos 15 years ago. Ask any Greek person and they will tell you a different way to make it. My recipe is taken from advice given to me by friends in Greece. It is simple, quick and gives a burger a taste of Greece!
Peel half the cucumber then grate all of it
Put the grated cucumber in muslin cloth or a tea towel to squeeze out all the excess liquid
Combine the yoghurt, cucumber, lemon juice and garlic
Add a dash of olive oil then sprinkle with ground pepper
Perfect for topping burgers or as a dip with breadsticks.
