Heat the oil in a small pan and sauté the onion and pepper for 3-4 minutes, until soft. Sprinkle in the chilli sauce.
Meanwhile, grill the fish fingers on both sides until cooked through.
Toast 2 slices of bread under the grill then top one slice with the onion mixture. Place the fish fingers on top then sprinkle with the grated cheese.
Cook under the grill until the cheese is melted and bubbling.
Place the other slice of toaste on top to serve.
This can also be cooked in a toastie machine!
