Preheat the oven to 180C/350F/Gas 4. Grease and line two baking trays with greaseproof paper.
Mix dry ingredients. Rub in cubed cold butter until mixture resembles breadcrumbs
Add almond extract and bring together into a ball
To color the dough, first split into three portions and colour each yellow, red and blue. Cut each of these into 4 pieces.
To make your colours, mix the following combinations:
Blue – 2 pieces of blue
Green – 1 piece of blue mixed with 1 piece of yellow
Yellow – 2 pieces of yellow
Orange –1 piece of yellow mixed with 1 piece of red
Red – 2 pieces of red
Purple –1 piece of red mixed with 1 piece of blue
Wrap each colour separately in cling film and refrigerate for 30 minutes.
Roll each colour into a sausage approx 30cm long.
Lay all six sausages next to each other and roll together to create one rainbow sausage.
Cut into 10 short pieces.
Roll each of these pieces into a 15cm sausage and coil onto the baking tray.
Bake for 22 minutes and cool on a wire rack.
Sprinkle with edible glitter and enjoy!
